Minetta Tavern: Dry-Aged Beef in a Room Aged Since 1937

New York argues endlessly about its best burger, but the argument usually starts here. Minetta Tavern’s Black Label Burger — a custom dry-aged blend built by butcher Pat LaFrieda, crowned with caramelized onions — turned a Greenwich Village literary haunt into a carnivore’s pilgrimage, and the rest of the menu backs the swagger with real steakhouse discipline.

The History

Opened in 1937 and named for the Minetta Brook that once ran beneath the Village, the tavern poured for Hemingway, E.E. Cummings, Ezra Pound and Dylan Thomas; local legend Joe Gould reputedly had his mail delivered to the bar. The building’s basement housed the office where Reader’s Digest was launched in 1922, before the tavern existed. After a fading red-sauce era ended in 2008, Keith McNally relaunched it in 2009 as a Parisian steakhouse inside a preserved New York tavern — earning three stars from the New York Times and nearly a decade with a Michelin star. Laurent Kalkotour now runs the kitchen.

What to Order

The Black Label Burger is the event; the humbler Minetta Burger with cheddar is the regulars’ quiet counter-argument. Beyond beef patties: roasted bone marrow with baguette soldiers, hand-cut steak tartare with quail egg, and the dry-aged côte de boeuf for two, carved tableside with marrow bones. Lunch hides a superb French dip; dessert means a Grand Marnier soufflé for two or crêpes Suzette, flamed with due ceremony.

The Space

A genuine time capsule: the original long wooden bar, pressed-tin ceiling, checkerboard floors, walls papered with decades of caricatures of regulars and boxing photographs. The back room glows under 1953 hand-painted murals of Village street scenes, ringed by crimson leather banquettes and low, flattering light. It is small, packed and loud in the best tavern tradition.

How hard is a reservation? Prime slots go fast — book well ahead, or aim for the bar, early evenings and the late-night window.
