The Concept

Founder Barry Dry, born and raised in Perth, landed in New York in 2011 for a finance career and found a city with world-class everything except café culture. In 2014 he opened a genuinely tiny hole-in-the-wall coffee counter in Midtown; the FiDi location that followed became the flagship-scale version of the idea and the foundation of his Parched Hospitality Group. The formula is straight from Melbourne and Perth: flat-white-grade espresso, bright rooms, vegetables treated with respect, and no rush to give up your table.

What to Order

The avocado toast is the definitive version of the genre — sourdough under smashed avo, marinated feta, watermelon radish, tajín and roasted sunflower seeds. The Brekkie Roll is the Aussie classic done properly: bacon, folded eggs, white cheddar, a hash brown and special sauce on brioche. Beyond those, the kimchi scramble with feta and sambal, the pulled pork Benedict, the mushroom toast with whipped ricotta and the dulce de leche waffles cover every brunch mood; an açaí bowl and a power bowl handle the virtuous mornings. The espresso is the point, though — and if the morning calls for it, the bar shakes espresso martinis.

The Space

Light timber, hanging plants and big windows — a bright, easy room that reads pure Melbourne against FiDi’s granite canyons, with outdoor tables working most of the year. Despite the name, it’s comfortable and never cramped.
